When it comes to refreshing drinks (and a lot of food, actually), sometimes the simplest recipes have the biggest impact. This raspberry ginger mocktail is one such drink. Though a pretty simple drink, it’s bursting with vibrant colors and flavors with a lively fizz that makes it stand out.

Fruity, sweet but not overwhelming, and slightly spicy in a way that’s both sophisticated and fun. Plus it’s full of carbonation making it a delightful fizz of a bubbly treat for your taste buds.

Sometimes these write-ups feel like a weird marketing campaign just stuffed full of all the buzzwords I can manage. Especially the intros cause I never feel like I know what to say (the rest of the post is talking about ingredients, process and pairings which I’m a little better at).

But I guess it kind of is a marketing campaign, because I want you to want to try out this recipe. So, whether you want to impress guests or simply enjoy a cool treat, this mocktail is the perfect choice.

There’s not a lot of ingredients, therefore each ingredient plays an outsized role in delivering full flavor. So, try to select high quality inputs so you can have the best drink possible. Here’s a breakdown of what goes into this tasty homemade ginger raspberry drink:

  • Raspberries – Hard to make a raspberry ginger mocktail without raspberries. Fresh, juicy raspberries are at the heart of this drink. They provide flavor, color, and a touch of tartness that perfectly balances the other ingredients with a lively, fruity base. Use fresh, ripe raspberries for the best flavor and color. If fresh just isn’t possible, then you could defrost some frozen raspberries to use in place.
  • Ginger Beer – Ginger beer brings a signature spicy warmth with a bit of carbonation. It’s the ginger part of this homemade ginger raspberry drink. Its zesty, robust flavor complements the berries and adds to the drink’s complexity. Ginger ale tends to be milder and sweeter than ginger beer. You can substitute one with the other if you really want to. Similar to root beer, ginger beer is a non alcoholic soft drink.

  • Lime Juice – Bright, citrusy notes with some acidity to round out the entire drink. I strongly recommend using fresh squeezed juice and not the concentrate stuff.
  • Seltzer Water – Ginger beer has some carbonation, but for an extra layer of fizz we’ll add seltzer water to the mix. It lightens the mocktail, making it incredibly refreshing.
  • Simple Syrup – To lend sweetness without any grit, simple syrup is a must. I have a simple syrup recipe that you can easily make at home by dissolving equal parts sugar and water over low heat.
  • Ice – A chilled drink is always more refreshing, so add ice.
  • Garnish – This part is really up to you. Well done garnishes can transform a simple drink into an elegant experience. Consider garnishing with slices of lime, mint sprigs, sliced ginger, and/or fresh raspberries to add some visual flair.

Making this homemade ginger raspberry drink is pretty easy. Mostly just gathering all of the ingredients, smooshing the raspberries up a bit, and then combining it all together. Follow these simple steps to create a delightful raspberry ginger mocktail at home:

Muddle Raspberries

Start by preparing fresh, juicy raspberries. Rinse them off in a colander. Place a handful (about 10-12) into a sturdy glass. If using frozen raspberries, let them thaw for 15 to 20 minutes before the next steps. Use a muddler or the back of a spoon to gently crush the raspberries.

Press and twist them a bit to break them up. They don’t need to be fully pulverized, though. This releases their juices and intensifies the raspberry flavor, forming the base of your raspberry ginger mocktail.

Add Everything Else

After preparing the raspberries, it’s time to add everything else. Pour the simple syrup, lime juice, ginger beer, and seltzer water into the glass with the raspberries. Try to pour gently so we don’t lose too much carbonation.

Just like with my rainbow lemonades, I prefer using the simple syrup to sweeten this drink. It fully incorporates without being gritty or undissolved.

For my recipe, I went with Fever-Tree Ginger Beer. It was high-quality, tasty, and locally available to me. Win, win, win. But any one you land on should work. And, if you aren’t a huge fan of the spicy ginger, you can use ginger ale which tends to be milder and sweeter. If you absolutely abhor ginger, then use Sprite I guess. I won’t judge you.

If you’re really dedicated and want full control over the flavor, you can also make your own ginger beer at home. It takes a bit more time and effort but could be a fun experiment.

Fresh vs. Frozen Raspberries

Fresh raspberries are the best choice when you can find ripe, high-quality berries. They offer the brightest flavor and the best texture, making your recipe taste its best. Look for berries that are firm, plump, and free from mold or bruising.

If fresh raspberries aren’t available or aren’t quite ripe, frozen raspberries work well as a convenient alternative. Just let them thaw slightly before muddling. Cause they’re frozen. And it’s hard to crush frozen things.

Adjusting For Perfect Balance

No recipe is perfect and there are a whole lot of variables that might lead to different results when you make it. So, it is important to be able to change and adjust on the fly. I think that is what makes for truly good chefs.

  • Sweetness: Tailor the sweetness to your liking by adjusting the amount of simple syrup used. Start with a smaller amount, taste, and adjust as needed. You can always add more in, you can’t really take any out. If it is too sweet, then you’ll have to try adding in more seltzer water to dilute it down a bit. Note that this will generally dilute all of the flavor in the drink.
  • Spiciness: If you love a spicier kick, opt for a ginger beer with a stronger ginger profile. For less, use ginger ale, or Sprite, or just less ginger beer and more seltzer water.
  • Fizz: For extra fizz, top off your glass with a splash of club soda. This also helps dilute if you find the ginger flavor too overpowering. If you hate carbonation, then you can stir the crap out of your drink and lose a lot of it…

Nobody’s got time to make a ton of individual glasses. So you have a few options when serving a crowd: either make a drink station where they can build it themselves, or make a large pitcher of raspberry ginger mocktail that can be poured out as needed.

Serving this ginger beer mocktail as a pitcher drink is essentially like making the drink in a single glass, just multiplied to fit a larger size.

To fit my size of pitcher, I multiplied the ingredients out to make a larger volume. Not everything ended up being an exact multiplier though. So make sure that you always taste and adjust as needed. My pitcher amounts below are for a bout 6 people.

Like with an individual glass, just muddle the berries, pour over everything else, and give it a gentle stir to combine.

Then set up a self-serve beverage station with the pitchers and an assortment of garnishes, allowing guests to personalize their drinks. You can even have some fun swizzle sticks available for people to gently stir their own drinks.
